New Pop-Up Could Redefine Santiago Cuisine

It’s called De Raíz, and it’s about to take Santiago dining by stormDe Raíz is operated by Diego Prado V., former student of Rene Redzepi at Denmark’s Noma and Rodolfo Guzman at Santiago’s Boragó.  Based only on pictures on their Facebook page, it looks as though Prado is taking cues from his former mentors and pushing the boundaries even further.  His Twitter feed has Prado and his team scouring every inch of Santiago’s Vega Central for hyper-local ingredients that others would simply pass off as “waste”.  Thus far, Prado and his team have only served two pop-up style dinners, but they promise there will be more, with a website currently in the works.  For fans of hyper-modern cuisine, this could be a turning point in Santiago’s culinary future.  Stay for more news and updates as they develop.  [via Qué Pasa]

Free Tours of Viña Santa Rita

In partnership with the GAM, located at Alameda 227, Viña Santa Rita will once again be offering free tours of its vineyard on the last Saturday of every month, beginning May 25th and ending October 26th, 2013.  We haven’t seen any updated news yet, but we’re assuming the event will be programmed like last year’s.  Buses will depart from the GAM at 12 pm and leave the vineyard at 5 pm.  As part of the free ticket, each guest will be given a small sandwich and a juice.  Once at the vineyard, guests can partake in wines, poetry readings, live theatre and music.  Tickets are free, but the numbers and limited.  Tickets can be claimed at the information desk of the GAM.  Not just a great afternoon out, this alliance between GAM and Viña Santa Rita brings together one of Santiago’s newest and brightest cultural institutions with a historical vineyard located along the wine route.  [via Estoy.cl]

Apparently Ecuadorians Spend About $35 a Week on Food

It’s not a piece of journalism that hasn’t been done before, but in a story on UK’s Daily Mail, photos of various international families’ weekly diets show just what you get for your money.  In Ecuador, it appears that just around $35 US will get you lots of dried grains and legumes, fresh produce and a very big smile.  Canadians apparently spend 10 times that amount, are a little heftier around the waist and eat a lot more processed foods.  Americans, no surprise, eat almost all processed foods and the Turks love bread.  Where are you and how much do you spend?  [via Daily Mail]

Firkü: Delivering Health, One Basket at a Time

Firkü, the 10-month old start-up based in Santiago, Chile, is delivering fruit.  Their goal is to provide large companies with the option of giving their workers something healthy to eat, thereby improving the workday and output.  They focus on both national and international companies with a worker-base larger than 50.  Not just delivering fruit, they’re using artisan-made wicker baskets from Chile’s wicker market Chimbarongo to support those “that dedicate their lives to wicker.”  The fruits they deliver include apples, pears, bananas and so on, all fruits that can be eaten by hand.  Read more here (in Spanish).  [via EMOL]

Peru is Expanding

Peru managed to get two placements (3 total in the top 100) in this year’s edition of San Pellegrino’s Top 50 Restaurants in the World, and it seems that isn’t all that’s expanding.  Gastón Acurio (Astrid y Gastón) and Virgilio Martínez (Central) will be partnering to open a new project in London.  Their hope is to give the larger world a chance to try Peruvian food and for Peruvian cooks to showcase their talents abroad.  [via Big Hospitality]
