As a precursor to Brazil’s massive Mesa SP festival that’s taking place through this Wednesday, November 5, some of the world’s leading chefs have assembled in São Paulo for the annual G11 summit, put together by Spain’s Basque Culinary Center to discuss modern cuisine and its advancement.  This isn’t any typical all-star cast getting together in one room.  These are chefs on the cutting edge, and chefs who have been redefining that edge for years.

Chefs like Michel Bras, Ferran Adriá, Enrique Olvera, Rodolfo Guzmán and more are on hand to talk about not just cuisine, but the issues facing the modern culinary world as we know it. Below, get a taste of what this G11 summit, i.e. a room full of the world’s top culinary minds, looks like.  Oh, to have been a fly on the wall.

Although ties between South America and Europe are already tight, as many of South America’s best chefs have trained in restaurants from Spain to France and beyond, Spain’s Basque Culinary Center is about to make those ties even stronger.  Diario de Gastronomía reports that for the first time ever, the innovative culinary school will create a department dedicated entirely to the exploration and promotion of Ecuadorian cuisine.  Regarded as one of a handful of mega-diverse nations on the planet, there won’t be any shortage of information or ingredients to cover.  ‘Catédra Ecuador: saberes y sabores’ will be focused primarily on the relationship between Ecuador and Spain, though the goal of the findings is to offer international use and promotion to Ecuador.
