Although we’ve already seen what Virgilio Martínez can do with Peruvian ingredients outside of his native Lima, earning a Michelin star for his beloved Lima London, later this year we’ll get a taste of his casual cooking. Nos, he told El Comercio, speaking of his forthcoming casual project, is “what I’ve always wanted to do in Lima. Something ultra super casual, fun and spontaneous, that opens all day.” The new restaurant, which Martínez says will be completely different from the food at both Central and both of his London restaurants, is set to open some time in May or June.
