If the last few months have been a preview, we can expect great things out of Santa Cruz, Bolivia’s Jardín de Asia in the coming year.  Back in October they hosted the first installment of Encuentros, the dinner series that is set to take place in four parts throughout 2015, bringing talent in the form of Peru’s Rafael Piqueras to show Bolivia the level of gastronomy they’re capable of employing.  Just last week, the Andean-Asian fusion restaurant unveiled their first-ever tasting menu, dubbed Travesía, which is a product of months of research and testing to bring diners a look into the future of Bolivian dining.

One of the best things about modern cuisine is that a good deal of restaurants now have in-house A/V departments.  While you can’t eat the food, the videos of the process are often so stunning, they’re enough to convince you that you need to go and eat.  And that’s just what this new video from Lima’s Central does, as they take us through the 16-course ‘Alturas’ tasting menu.  Through 16 different plates and presentations, diners go from extreme altitude to far below the sea, tasting a good deal of ingredients that even a fair share of Peruvians have never heard of.  Mistura is just around the corner so, if you’re planning on going, after you watch this you might want to make your reservation at Central.  Provecho!
