This is the video we’ve been waiting for. Last month, to kick off the 2015 season of Cocina Sin Fronteras in Buenos Aires, chef Fer Rivarola invited a couple of meat masters, Juan Gaffuri from Elena at the Four Seasons, and acclaimed Peruvian butcher-cum-chef, Renzo Garibaldi, from Lima’s Osso. The three got together for a one-night-only dinner that featured,  you guessed it, lots of dry-aged meat.

For all you novice cooks who’d like the chance to cook alongside of some of Lima’s hottest talents, now’s your chance.  To celebrate their first anniversary, Ignacio Barrios and the team at Urban Kitchen have created an all-star lineup of classes for December, that features everyone from Renzo Garibaldi, Monica Kisic, to Francesco de Sanctis and Don Lucho.  Want to learn about fermentation, butchery, or northern Peruvian cuisine?  They’ve got you covered.

December’s special schedule kicks off on Monday, December 1 with a bread class from Monica Kisic, who will also return later in the month.  Garibaldi will literally break down meat on December 3, and the rest of the month is full of classes like Nikkei cuisine, veggie burgers, and more.  Classes range from S./ 100 on up to S./ 200.  For the complete schedule, or to make your reservation, head to Urban Kitchen’s website. 

Mercado Paula Gourmet Hits Santiago This Weekend (ES)

Now that the heat is on and the sun is out in Santiago, it’s a great weekend to get out and enjoy of one of the city’s biggest and most important food festivals, Mercado Paula Gourmet.  Featuring chefs from around the world including Rafael Piqueras, acclaimed chef of Maras in Lima, Australia’s Bill Granger, and more than 100 stands offering a wide variety of dishes and gourmet products, the seventh edition of this springtime classic promises to be bigger and better than ever.  This year, in addition to the six different restaurants on hand serving up world cuisine, there will also be an entire section dedicated to food trucks. Renzo Garibaldi, the Peruvian butcher who has been been winning over hearts and stomachs with his 300-day dry-aged beef, and other carnivorous creations, will also be on hand for live butchering and cooking demonstrations.  Simply put, there will be no shortage of great cuisine.

Mercado Paula Gourmet will take place this weekend at Parque Araucano, from Thursday, October 23, to Sunday, October 26.  The festival will run from 11:00 to 23:00 each day.  General admission is CLP $5.000, and children 12 and under will enter for free.  We’ll see you there.
